Description

This Garlicky Cabbage Soup is a comforting and flavorful side dish that’s easy to make and packed with nourishing ingredients. The combination of tender cabbage, aromatic garlic, and a blend of herbs creates a warm and satisfying soup that’s perfect for a cozy weeknight dinner.

Ingredients

– 2 tablespoons olive oil

– 4 cloves garlic, minced

– 1 onion, diced

– 1 head green cabbage, chopped into 1-inch pieces

– 4 cups vegetable broth

– 1 teaspoon dried thyme

– 1 teaspoon dried oregano

– Salt and black pepper to taste

– Chopped parsley for garnish

Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the minced garlic and diced onion. Sauté for 2-3 minutes, until the onion is translucent.

3. Add the chopped cabbage to the pot and stir to combine.

4. Pour in the vegetable broth and stir in the dried thyme and oregano. Season with salt and black pepper to taste.

5. Bring the soup to a simmer and cook for 15-20 minutes, or until the cabbage is tender.

6. Ladle the Garlicky Cabbage Soup into bowls and garnish with chopped parsley.

Notes

For a heartier meal, you can add cooked sausage or diced chicken to the soup. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
