Description

This garlic cauliflower mushroom skillet is a quick, flavorful, and nutritious meal packed with tender veggies in a savory garlic sauce. Ready in just 30 minutes, it’s a perfect weeknight dinner.

Ingredients

– 1 head cauliflower, cut into florets

– 8 oz cremini mushrooms, sliced

– 3 cloves garlic, minced

– 2 tbsp olive oil

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper

Instructions

1. 1. Heat olive oil in a large skillet over medium-high heat.

2. 2. Add cauliflower florets and sauté for 5-7 minutes, until starting to soften.

3. 3. Add sliced mushrooms and minced garlic. Cook for 3-4 minutes, stirring frequently, until mushrooms are tender.

4. 4. Sprinkle in dried thyme, salt, and pepper. Toss to coat.

5. 5. Continue cooking for 2-3 minutes, until cauliflower is tender and everything is heated through.

6. 6. Serve hot and enjoy!

Notes

For extra flavor, try adding a splash of soy sauce or a squeeze of lemon juice at the end. Leftovers make a great lunch the next day.
