Description

These Garlic Butter Zucchini Skewers are a quick, flavorful side dish that’s perfect for busy weeknights or summer barbecues. The tender zucchini pieces are coated in a delectable garlic butter sauce for a veggie-packed delight.


Ingredients

– 2 lbs zucchini, cut into 1-inch pieces

– 4 tbsp unsalted butter, melted

– 3 cloves garlic, minced

– 1 tsp salt

– 1/2 tsp black pepper


Instructions

1. 1. Preheat oven to 400°F or prepare a grill for medium-high heat.

2. 2. In a large bowl, toss the zucchini pieces with the melted butter, garlic, salt, and pepper until evenly coated.

3. 3. Thread the zucchini pieces onto skewers, leaving a bit of space between each piece.

4. 4. If roasting, place the skewers on a parchment-lined baking sheet. Roast for 15-18 minutes, flipping halfway, until zucchini is tender and lightly browned.

5. 5. If grilling, place the skewers directly on the grill grates and cook for 12-15 minutes, turning occasionally, until zucchini is tender and charred in spots.

Notes
