Ingredients
– 1 medium head of green cabbage, shredded into noodle-like strips
– 4 tablespoons unsalted butter
– 4 cloves garlic, minced
– 1/4 cup grated parmesan cheese
– 2 tablespoons chopped fresh parsley
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Shred the cabbage into long, thin noodle-like strips using a sharp knife or mandoline slicer.
2. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
3. Add the shredded cabbage to the skillet and toss to coat with the garlic butter. Cook for 5-7 minutes, stirring occasionally, until the cabbage is tender but still has a slight bite.
4. Remove from heat and stir in the grated parmesan cheese and chopped parsley. Season with salt and black pepper to taste.
5. Serve the Garlic Butter Cabbage Noodles hot, garnished with additional parsley if desired.
Notes
For a creamier texture, stir in 2-3 tablespoons of heavy cream or half-and-half along with the parmesan cheese. You can also add diced cooked bacon or crumbled feta cheese as toppings.
