Description
Garlic Butter Beef Bites & Potatoes is a quick and easy dinner recipe that’s full of flavor. Tender bites of beef are simmered in a rich garlic butter sauce and served with crispy roasted potatoes for a satisfying meal.
Ingredients
– 1 lb beef sirloin, cut into 1-inch cubes
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 4 tbsp unsalted butter
– 1 tsp dried thyme
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 lb baby potatoes, halved
Instructions
1. – Preheat oven to 400°F. Toss the halved potatoes with 1 tbsp olive oil and season with salt and pepper. Spread on a baking sheet and roast for 20-25 minutes, until crispy and golden brown.
2. – In a large skillet, heat the remaining 1 tbsp olive oil over medium-high heat. Add the beef cubes in a single layer and cook for 2-3 minutes per side until browned on the outside but still pink inside.
3. – Reduce heat to low and add the minced garlic. Cook for 1 minute, stirring constantly, until fragrant.
4. – Add the butter, thyme, oregano, salt, and pepper. Stir to coat the beef and continue cooking for 2-3 minutes, until the sauce has thickened slightly.
5. – Serve the garlic butter beef bites immediately, garnished with the crispy roasted potatoes.
Notes
For extra flavor, you can add a splash of red wine or beef broth to the sauce. The beef can also be cooked in batches to get a nice sear. Store any leftovers in an airtight container in the fridge for up to 3 days.
