Ingredients

– 1 cup (2 sticks) unsalted butter, melted

– 2 cups granulated sugar

– 2 large eggs

– 2 teaspoons vanilla extract

– 1 3/4 cups all-purpose flour

– 1/4 cup unsweetened cocoa powder

– 2 teaspoons ground ginger

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground cloves

– 1/4 teaspoon ground nutmeg

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 1 cup (2 sticks) unsalted butter, softened

– 4 cups confectioners’ sugar

– 1 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F. Grease an 8×8-inch baking pan.

2. In a large bowl, whisk together the melted butter and granulated sugar until combined. Beat in the eggs one at a time, then stir in the 2 teaspoons of vanilla.

3. In a separate bowl, whisk together the flour, cocoa powder, ginger, cinnamon, cloves, nutmeg, baking powder, and salt.

4. Gradually stir the dry ingredients into the wet ingredients until just combined. Pour the batter into the prepared baking pan and spread it out evenly.

5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the brownies to cool completely.

6. In a large bowl, beat the softened butter with an electric mixer until light and fluffy. Gradually add the confectioners’ sugar and 1 teaspoon of vanilla, beating until the frosting is smooth and creamy.

7. Spread the frosting evenly over the cooled brownies. Refrigerate for at least 30 minutes before cutting and serving.

Notes

For a more pronounced gingerbread flavor, you can increase the spices to 1 tablespoon ground ginger, 2 teaspoons ground cinnamon, and 1/2 teaspoon each of ground cloves and nutmeg. Storing in an airtight container at room temperature for up to 5 days.
