Description
This classic French onion soup is the ultimate in comfort food. Caramelized onions are simmered in a rich beef broth, then topped with crusty bread and melted Gruyère cheese for a restaurant-worthy dish you can easily make at home.
Ingredients
– 4 large yellow onions, thinly sliced
– 2 tablespoons unsalted butter
– 1 tablespoon olive oil
– 1 teaspoon granulated sugar
– 1 tablespoon all-purpose flour
– 6 cups beef broth
– 1 bay leaf
– 2 sprigs fresh thyme
– 1 baguette, sliced into 1-inch thick rounds
– 2 cups shredded Gruyère cheese
Instructions
1. In a large pot or Dutch oven, melt the butter and olive oil over medium-low heat. Add the sliced onions and sugar, and cook for 45-60 minutes, stirring occasionally, until the onions are deeply caramelized and golden brown.
2. Sprinkle the flour over the onions and stir to coat. Cook for 2-3 minutes, then gradually whisk in the beef broth. Add the bay leaf and thyme sprigs.
3. Bring the soup to a simmer and cook for 30 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
4. Preheat the oven to 400°F (200°C).
5. Ladle the soup into oven-safe bowls and top each with a slice of baguette and a generous amount of shredded Gruyère cheese.
6. Place the bowls on a baking sheet and bake for 10-15 minutes, until the cheese is melted and bubbly.
7. Serve the French onion soup hot, garnished with additional fresh thyme if desired.
Notes
For best results, use a good-quality beef broth. You can also add a splash of dry white wine or sherry to the soup for extra depth of flavor. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
