Description

Ingredients

– 1 pound boneless, skinless chicken breasts, cubed

– 2 large yellow onions, thinly sliced

– 3 cloves garlic, minced

– 2 cups uncooked orzo pasta

– 2 cups chicken broth

– 1 cup shredded Gruyère cheese

– 1/2 cup grated Parmesan cheese

– 2 tablespoons unsalted butter

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F.

2. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook for 10-15 minutes, stirring occasionally, until caramelized and golden brown.

3. Add the garlic and cook for 1 minute, until fragrant.

4. In a large bowl, combine the cubed chicken, cooked onions and garlic, uncooked orzo, chicken broth, Gruyère cheese, Parmesan cheese, thyme, salt, and pepper. Stir to mix well.

5. Transfer the mixture to a 9×13 inch baking dish and spread evenly.

6. Bake for 30-35 minutes, or until the chicken is cooked through and the orzo is tender.

7. Remove from the oven and let stand for 5 minutes before serving.

Notes

This casserole can be made ahead of time and refrigerated or frozen for later. Simply bake from chilled or frozen, adding a few extra minutes to the cooking time as needed. Leftovers can be stored in the refrigerator for up to 4 days.
