Ingredients
– 2 (5 oz) cans tuna, drained
– 1/4 cup mayonnaise
– 2 tbsp Dijon mustard
– 1 tbsp finely chopped shallot
– 1 tbsp finely chopped fresh parsley
– 1 tsp lemon juice
– 1/4 tsp salt
– 1/4 tsp black pepper
– 8 slices whole-grain bread
– 4 leaves lettuce
Instructions
1. – In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, shallot, parsley, lemon juice, salt, and pepper. Mix well.
2. – Divide the tuna salad evenly among 4 slices of bread.
3. – Top each with a lettuce leaf and another slice of bread.
4. – Serve immediately or refrigerate until ready to enjoy.
Notes
For a more indulgent sandwich, try topping with sliced avocado or a sprinkle of shredded Gruyère cheese. The tuna salad can also be served on a bed of greens for a lighter option.
