Ingredients

– 2 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt

– 1 egg

– 1 teaspoon vanilla extract

– 1 cup dried figs, finely chopped


Instructions

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.

4. Beat in the egg and vanilla extract until well combined.

5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

6. On a lightly floured surface, roll the dough out into a rectangle, about 1/4-inch thick.

7. Spread the chopped figs evenly over the dough, leaving a 1-inch border.

8. Carefully roll the dough up into a log, starting from the long side.

9. Slice the log into 1-inch thick cookies and place them on the prepared baking sheet, spacing them about 2 inches apart.

10. Bake for 12-15 minutes, or until the cookies are lightly golden brown.

11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a softer cookie, bake for the lower end of the time range. For a slightly crisper cookie, bake for the higher end. These cookies can be stored in an airtight container at room temperature for up to 1 week.
