Description

This vibrant Fall Salad is a delightful blend of crisp greens, roasted vegetables, and a creamy Maple-Lime Dressing that adds a perfect balance of sweetness and tanginess.

Ingredients

– 6 cups mixed greens (such as spinach, arugula, and kale)

– 1 cup roasted butternut squash cubes

– 1/2 cup pecans, toasted

– 1/4 cup crumbled feta cheese

– 2 tablespoons olive oil

– 2 tablespoons maple syrup

– 1 tablespoon lime juice

– 1 teaspoon Dijon mustard

– Salt and pepper to taste

Instructions

1. 1. In a large salad bowl, combine the mixed greens, roasted butternut squash, pecans, and feta cheese.

2. 2. In a small bowl, whisk together the olive oil, maple syrup, lime juice, and Dijon mustard. Season with salt and pepper to taste.

3. 3. Drizzle the Maple-Lime Dressing over the salad and toss gently to coat.

4. 4. Serve the Fall Salad immediately, garnished with extra pecans if desired.

Notes

– For a heartier meal, add grilled chicken or shrimp. – To make it vegan, omit the feta cheese. – The salad can be prepared in advance, but wait to dress it until just before serving.
