Ingredients

– 3 cups old-fashioned oats

– 1 cup mixed nuts (such as almonds, pecans, walnuts)

– 1/2 cup shredded coconut

– 1/4 cup brown sugar

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon ground ginger

– 1/4 cup maple syrup

– 1/4 cup coconut oil, melted

– 1/2 teaspoon vanilla extract

– 1/4 teaspoon salt


Instructions

1. – Preheat oven to 325°F and line a large baking sheet with parchment paper.

2. – In a large bowl, combine the oats, nuts, coconut, brown sugar, cinnamon, nutmeg, and ginger. Stir to mix well.

3. – Add the maple syrup, melted coconut oil, vanilla, and salt. Stir until the dry ingredients are evenly coated.

4. – Spread the granola mixture in a single layer on the prepared baking sheet.

5. – Bake for 18-20 minutes, stirring halfway, until the granola is golden brown and fragrant.

6. – Remove from the oven and let cool completely before storing in an airtight container.

Notes

– For chunkier granola, press the mixture down lightly before baking.
