Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon salt
– 1 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1/2 cup packed brown sugar
– 1/3 cup all-purpose flour
– 1/4 cup old-fashioned oats
– 4 tablespoons unsalted butter, cubed
– 1/2 teaspoon ground cinnamon
Instructions
1. – Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. – In a medium bowl, whisk together the 2 cups of flour, baking powder, baking soda, 1/2 teaspoon cinnamon, and salt. Set aside.
3. – In a large bowl, beat the 1 cup of butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract.
4. – Gradually mix the dry ingredients into the wet ingredients until just combined.
5. – In a small bowl, mix together the brown sugar, 1/3 cup flour, oats, 4 tablespoons cubed butter, and 1/2 teaspoon cinnamon until crumbly.
6. – Scoop rounds of dough onto the prepared baking sheet, about 2 tablespoons per cookie. Sprinkle the crumble topping evenly over the cookies.
7. – Bake for 12-15 minutes, until the edges are lightly golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
