Ingredients
– 2 boneless, skinless chicken breasts
– 1/2 cup diced celery
– 1/2 cup diced apples
– 1/4 cup diced red onion
– 2 tablespoons chopped pecans
– 2 tablespoons plain Greek yogurt
– 1 tablespoon Dijon mustard
– 1 tablespoon apple cider vinegar
– 1 teaspoon honey
– Salt and pepper to taste
Instructions
1. 1. Grill or bake the chicken breasts until cooked through. Allow to cool, then shred or dice the chicken.
