Description

Savor the cozy, autumnal flavors of this Fall Apple Cider Stew Mash. This comforting one-pot meal features tender chunks of beef, potatoes, carrots, and celery simmered in a rich, savory apple cider broth. It’s the perfect dish to warm you up on a chilly night.


Ingredients

– 2 lbs beef stew meat, cubed

– 3 medium potatoes, peeled and cubed

– 3 carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 onion, diced

– 3 garlic cloves, minced

– 4 cups apple cider

– 2 cups beef broth

– 2 tbsp tomato paste

– 2 tsp dried thyme

– 1 bay leaf

– Salt and pepper to taste


Instructions

1. – In a large pot or dutch oven, sear the beef over medium-high heat until browned on all sides, about 5 minutes. Transfer to a plate.

2. – Add the onion and garlic to the pot and sauté for 2-3 minutes until fragrant.

3. – Stir in the tomato paste and cook for 1 minute.

4. – Pour in the apple cider and beef broth, scraping up any browned bits from the bottom of the pot.

5. – Add the seared beef, potatoes, carrots, celery, thyme, and bay leaf. Bring to a boil.

6. – Reduce heat to low, cover and simmer for 30-40 minutes, or until the beef and vegetables are tender.

7. – Season with salt and pepper to taste.

8. – Serve hot, garnished with fresh thyme if desired.

Notes

– For extra flavor, you can brown the beef in batches to get a nice sear on all the pieces.

– Substitute sweet potatoes for a healthier option.

– Add a splash of apple cider vinegar at the end for a touch of acidity.
