Description

Crispy on the outside, fluffy on the inside, these Falafel Waffles are a delicious and unexpected twist on the classic Middle Eastern dish. Made with chickpeas, herbs, and spices, they’re packed with flavor and perfect for serving as a main dish or appetizer.


Ingredients

– 1 (15 oz) can chickpeas, drained and rinsed

– 1/2 cup all-purpose flour

– 1/4 cup chopped fresh parsley

– 2 tablespoons chopped fresh cilantro

– 1 teaspoon ground cumin

– 1/2 teaspoon baking powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup unsweetened almond milk

– 2 tablespoons olive oil


Instructions

1. In a food processor, pulse the chickpeas until they are finely chopped but not pureed.

2. In a large bowl, combine the chopped chickpeas, flour, parsley, cilantro, cumin, baking powder, salt, and pepper. Mix well.

3. Stir in the almond milk and olive oil until a thick batter forms.

4. Preheat a waffle iron and coat with nonstick cooking spray. Scoop about 1/2 cup of the batter onto the hot waffle iron and cook for 5-7 minutes, or until the waffles are golden brown and crispy.

5. Serve the falafel waffles warm, with your favorite toppings such as tahini sauce, sliced cucumbers, and lemon wedges.

Notes

For extra crispiness, you can lightly mist the waffles with cooking spray before cooking. These waffles can also be made ahead and reheated in the oven or toaster.
