Ingredients
– 3 cups all-purpose flour
– 1 teaspoon active dry yeast
– 1 1/4 cups warm water
– 2 tablespoons olive oil, plus more for drizzling
– 1 teaspoon salt
– 1/2 cup assorted edible flowers (such as nasturtiums, pansies, and marigolds)
Instructions
1. In a large bowl, combine the flour and yeast. Add the warm water, 2 tablespoons olive oil, and salt. Stir until a shaggy dough forms.
2. Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until smooth and elastic.
3. Place the dough in a lightly greased bowl, cover with a damp towel, and let rise for 1 hour, or until doubled in size.
4. Punch down the dough and use your fingers to spread it out into a rectangular shape on a parchment-lined baking sheet.
5. Use your fingertips to dimple the surface of the dough, then drizzle with a bit more olive oil.
6. Arrange the edible flowers over the top of the focaccia, pressing them gently into the dough.
7. Let the focaccia rise for an additional 30 minutes.
8. Preheat the oven to 400°F.
9. Bake the focaccia for 20-25 minutes, until golden brown.
10. Serve the Edible Flower Focaccia warm, with additional olive oil for dipping.
Notes
For best results, use a variety of colorful, organic edible flowers. Avoid flowers that have been treated with pesticides. Store any leftover focaccia in an airtight container for up to 3 days.
