Ingredients
– 2 lbs boneless, skinless chicken thighs
– 1 tbsp olive oil
– 3 cloves garlic, minced
– 1 tbsp ground cumin
– 1 tsp smoked paprika
– 1 tsp ground coriander
– 1 tsp ground cinnamon
– 1 tsp salt
– 1/2 tsp black pepper
– 1/4 cup lemon juice
– 1/4 cup water
Instructions
1. – Place the chicken thighs in a slow cooker.
2. – In a small bowl, combine the olive oil, garlic, cumin, paprika, coriander, cinnamon, salt, and pepper. Rub the spice mixture all over the chicken.
3. – Pour the lemon juice and water over the chicken.
4. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
5. – Shred the chicken using two forks.
6. – Serve the slow cooker chicken shawarma in pita bread, over rice or salad, or however you like!
Notes
– For extra flavor, add a pinch of ground cloves or cardamom to the spice blend.
– Garnish with chopped parsley, diced tomatoes, and a drizzle of tahini sauce.
