Description

Tender and juicy fiesta lime chicken is topped with fresh avocado for a flavor-packed, easy weeknight meal.


Ingredients

– 4 boneless, skinless chicken breasts

– 2 tbsp olive oil

– 2 tsp chili powder

– 1 tsp garlic powder

– 1 tsp ground cumin

– 1 tsp salt

– 1/2 tsp black pepper

– 2 limes, juiced

– 2 avocados, diced


Instructions

1. 1. Preheat oven to 400°F.

2. 2. In a small bowl, mix together the chili powder, garlic powder, cumin, salt, and pepper.

3. 3. Rub the seasoning all over the chicken breasts.

4. 4. Heat the olive oil in a large oven-safe skillet over medium-high heat.

5. 5. Add the chicken and cook for 3-4 minutes per side until browned.

6. 6. Transfer the skillet to the oven and bake for 15-18 minutes until the chicken is cooked through.

7. 7. Remove the chicken from the oven and squeeze the lime juice over the top.

8. 8. Top the chicken with the diced avocado and serve immediately.

Notes

For best results, use fresh, ripe avocados. Swap out the lime juice for lemon juice if desired. Serve with rice, beans, or a fresh salad.
