Ingredients
– 1 pound boneless, skinless chicken breasts, cubed
– 1 cup long-grain white rice
– 2 cups low-sodium chicken broth
– 1 cup plain Greek yogurt
– 1 cucumber, peeled, seeded, and grated
– 2 cloves garlic, minced
– 2 tablespoons lemon juice
– 1 tablespoon chopped fresh dill, plus more for garnish
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F. Grease a 9×13-inch baking dish.
2. In the prepared baking dish, combine the cubed chicken, rice, and chicken broth. Stir to combine.
3. Cover the dish tightly with foil and bake for 30 minutes, or until the rice is tender and the chicken is cooked through.
4. While the dish is baking, prepare the tzatziki sauce. In a medium bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, 1 tablespoon of dill, salt, and pepper.
