Ingredients
– 1 1/2 cups all-purpose flour
– 1 cup granulated sugar
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 2 large eggs
– 1 cup milk
– 1/2 cup vegetable oil
– 1 cup chopped roasted pistachios
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
2. In a large bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and salt.
3. In a separate bowl, beat the eggs, then stir in the milk and vegetable oil until well combined.
4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
5. Gently fold in 3/4 cup of the chopped pistachios, reserving the remaining 1/4 cup for topping.
6. Pour the batter into the prepared cake pan and smooth the top.
7. Sprinkle the remaining 1/4 cup of chopped pistachios over the top of the batter.
8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
