Ingredients

– 2 cups all-purpose flour

– 1/2 cup granulated sugar

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup cold water

– 2 dragon fruits, peeled and sliced

– 1 tablespoon powdered sugar, for dusting


Instructions

1. In a large bowl, combine the all-purpose flour and granulated sugar. Cut in the chilled butter until the mixture resembles coarse crumbs.

2. Add the cold water, a tablespoon at a time, and mix until the dough just begins to come together. Do not overmix.

3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

4. Preheat the oven to 375°F (190°C).

5. On a lightly floured surface, roll the chilled dough into a 12-inch circle, about 1/4 inch thick.

6. Transfer the dough to a 9-inch pie dish. Trim the excess dough and crimp the edges.

7. Arrange the sliced dragon fruit evenly over the pie crust.

8. Bake for 30-35 minutes, or until the crust is golden brown.

9. Remove from the oven and let cool completely.

10. Dust the cooled pie crust with powdered sugar before serving.

Notes

For a variation, you can add a light drizzle of honey or a sprinkle of chopped pistachios on top of the dragon fruit slices.
