Description

Dill Pickle Parmesan Chicken is a quick and flavorful main dish that’s perfect for busy weeknights. Juicy chicken breasts are coated in a tangy, dill-infused breading and baked to crispy perfection, then topped with a creamy dill sauce and grated Parmesan cheese.


Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup dill pickle chips, finely chopped

– 1 cup grated Parmesan cheese

– 1 cup panko breadcrumbs

– 2 eggs, beaten

– 1 tsp dried dill

– 1 tsp garlic powder

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. – In a shallow bowl, combine the chopped dill pickles, Parmesan cheese, and panko breadcrumbs.

3. – In a separate shallow bowl, beat the eggs.

4. – Dip the chicken breasts into the beaten eggs, then coat them in the dill pickle-Parmesan breading mixture, pressing gently to adhere.

5. – Place the breaded chicken on the prepared baking sheet.

6. – Bake for 25-30 minutes, or until the chicken is cooked through and the breading is golden brown.

7. – Serve the Dill Pickle Parmesan Chicken warm, drizzled with a creamy dill sauce if desired.

Notes

– For a creamier dill sauce, mix 1/2 cup sour cream with 2 tbsp chopped fresh dill and a squeeze of lemon juice.

– Leftover chicken can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
