This Dill Pickle Chicken Salad is a refreshing and flavorful main dish perfect for summer. Tender chicken, crunchy dill pickles, and a creamy dressing come together to create a delightful, family-friendly meal.
Ingredients
– 2 pounds boneless, skinless chicken breasts
– 1 cup diced dill pickles
– 1 cup mayonnaise
– 1/2 cup sour cream
– 1/2 cup diced celery
– 1/4 cup diced red onion
– 2 tablespoons Dijon mustard
– 1 teaspoon dried dill
– 1/2 teaspoon garlic powder
– 1/4 teaspoon black pepper
Instructions
1. Poach the chicken breasts in simmering water until cooked through, about 15-20 minutes. Shred or dice the chicken and let cool.
2. In a large bowl, combine the shredded chicken, diced dill pickles, mayonnaise, sour cream, celery, red onion, Dijon mustard, dried dill, garlic powder, and black pepper. Stir until well mixed.
3. Taste and adjust seasoning as needed. Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
4. Serve the Dill Pickle Chicken Salad on a bed of greens, in sandwiches, or with crackers for a light and refreshing meal.
Notes
For a spicier version, add a pinch of cayenne pepper. The salad can be made a day in advance and stored in the refrigerator until ready to serve.
