Description

Deviled Potatoes are a classic and delightful appetizer or side dish. Boiled potatoes are mashed and mixed with a creamy, tangy filling, then piped back into the potato halves for a perfect bite-sized treat.


Ingredients

– 6 medium Yukon Gold potatoes, boiled and cooled

– 1/2 cup mayonnaise

– 2 tablespoons Dijon mustard

– 1 teaspoon paprika, plus more for garnish

– 2 tablespoons finely chopped fresh chives, plus more for garnish

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Boil the potatoes until tender, about 15 minutes. Drain and let cool.

2. Once cool enough to handle, cut the potatoes in half lengthwise.

3. Scoop out the flesh into a medium bowl, leaving a thin layer of potato attached to the skin.

4. Mash the potato flesh until smooth.

5. Add the mayonnaise, mustard, paprika, chives, salt, and pepper. Stir until well combined.

6. Spoon or pipe the filling back into the potato skin halves.

7. Garnish with additional paprika and chives.

8. Serve immediately or refrigerate until ready to serve.

Notes

For a richer filling, use sour cream in place of some of the mayonnaise. You can also add a sprinkle of cayenne pepper for a little heat.
