Ingredients

– 12 hard-boiled eggs

– 1/2 cup mayonnaise

– 2 tablespoons Dijon mustard

– 1 teaspoon paprika, plus more for garnish

– 1 tablespoon finely chopped chives, plus more for garnish

– Salt and pepper to taste


Instructions

1. Carefully peel the hard-boiled eggs and cut each egg in half lengthwise.

2. Gently remove the yolks from the egg whites and place them in a medium bowl.

3. Add the mayonnaise, Dijon mustard, 1 teaspoon of paprika, and 1 tablespoon of chopped chives to the yolks. Season with salt and pepper to taste.

4. Using a hand mixer or a fork, mash and mix the yolk mixture until it’s smooth and creamy.

5. Spoon or pipe the yolk mixture into the hollowed-out egg white halves.
