Ingredients
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/4 cups granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
Instructions
1. – In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
2. – In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
3. – Beat in the egg and vanilla extract until well combined.
4. – Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
5. – Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour (or up to 3 days).
6. – Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
7. – Working with one disc at a time, roll the dough out on a lightly floured surface to 1/4-inch thickness.
8. – Use cookie cutters to cut out shapes and transfer the cookies to the prepared baking sheets, spacing them about 1 inch apart.
9. – Bake for 8-10 minutes, until the edges are lightly golden.
10. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
11. – Decorate the cooled cookies with icing and sprinkles, if desired.
Notes
For best results, be sure to chill the dough before rolling and cutting. This helps the cookies hold their shape during baking. You can also freeze the unbaked cookie dough for up to 3 months.
