Ingredients
– 1 lb lamb, thinly sliced
– 8 oz wide rice noodles
– 2 tbsp vegetable oil
– 3 cloves garlic, minced
– 1 tbsp grated ginger
– 1 tbsp ground cumin
– 2 tbsp soy sauce
– 1 tbsp rice vinegar
– 1 tbsp honey
– 1/2 tsp red pepper flakes
– 2 cups baby spinach
– 2 green onions, sliced
– Cilantro, for garnish
Instructions
1. 1. In a large bowl, combine the lamb, 1 tbsp soy sauce, 1 tsp rice vinegar, and 1 tsp ground cumin. Mix well and let marinate for 15 minutes.
2. 2. Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions. Drain and set aside.
3. 3. Heat the vegetable oil in a large skillet or wok over high heat. Add the marinated lamb and stir-fry until browned, about 3-4 minutes.
4. 4. Add the garlic, ginger, and remaining 1 tbsp cumin. Stir-fry for 1 minute until fragrant.
5. 5. Add the cooked noodles, remaining 1 tbsp soy sauce, 2 tsp rice vinegar, honey, and red pepper flakes. Toss everything together until well combined and heated through, about 2-3 minutes.
6. 6. Remove from heat and stir in the baby spinach until wilted.
7. 7. Garnish with sliced green onions and cilantro before serving.
Notes
For a spicier dish, add more red pepper flakes. You can also substitute ground lamb or beef for a different protein. This dish is best enjoyed immediately, but leftovers can be stored in the refrigerator for up to 3 days.
