Description

Ingredients

– 1 lb ground beef or ground turkey

– 1 packet taco seasoning

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can pinto beans, drained and rinsed

– 1 (15 oz) can corn, drained

– 1 (24 oz) jar salsa

– 4 cups chicken or beef broth


Instructions

1. – In a large skillet, cook the ground meat over medium heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the taco seasoning and stir to coat the meat.

3. – Transfer the seasoned meat to a slow cooker.

4. – Add the black beans, pinto beans, corn, salsa, and broth. Stir to combine.

5. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until heated through.

6. – Serve hot, garnished with your favorite taco toppings like shredded cheese, sour cream, and diced avocado.

Notes

– For a thicker soup, you can mash some of the beans with a potato masher before adding them to the slow cooker.

– Customize the heat level by using a mild, medium, or spicy salsa.

– This soup freezes well for up to 3 months. Let it thaw in the refrigerator before reheating.
