Ingredients
– 1 lb boneless, skinless chicken breasts
– 8 oz cream cheese, softened
– 1 cup grated parmesan cheese
– 4 cups chicken broth
– 1 cup milk
– 2 cloves garlic, minced
– 1 tsp dried basil
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. Place the chicken breasts in the bottom of a slow cooker.
2. 2. In a medium bowl, mix together the softened cream cheese, parmesan cheese, chicken broth, milk, garlic, basil, oregano, salt, and pepper until well combined.
3. 3. Pour the cheese mixture over the chicken in the slow cooker.
4. 4. Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
5. 5. Shred the chicken using two forks, then stir it back into the soup.
6. 6. Serve hot, garnished with additional parmesan cheese and fresh basil, if desired.
Notes
For a thicker soup, you can add 2-3 tablespoons of all-purpose flour or cornstarch to the cheese mixture before adding it to the slow cooker. Adjust seasoning to taste.
