Crispy, golden-brown taquitos filled with tender, juicy shredded chicken make for an irresistible appetizer or main dish. These taquitos come together in just 30 minutes for a quick and easy meal.
Ingredients
– 1 pound boneless, skinless chicken breasts
– 1 teaspoon chili powder
– 1 teaspoon ground cumin
– 1/2 teaspoon garlic powder
– 1/2 teaspoon salt
– 12 small corn tortillas
– 1/2 cup vegetable oil for frying
Instructions
1. Preheat oven to 375°F.
2. Season the chicken breasts with chili powder, cumin, garlic powder, and salt.
3. Bake the chicken for 25-30 minutes, until cooked through. Shred the chicken using two forks.
4. Warm the tortillas in the microwave for 20-30 seconds to make them pliable.
5. Place 2-3 tablespoons of shredded chicken near the edge of each tortilla. Roll the tortilla tightly around the filling.
6. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat.
7. Fry the taquitos for 2-3 minutes per side, until golden brown and crispy.
8. Drain the taquitos on a paper towel-lined plate and serve hot with your favorite dips and toppings.
Notes
For a healthier option, you can bake the taquitos instead of frying. Place the rolled taquitos seam-side down on a baking sheet and bake at 400°F for 15-20 minutes, flipping halfway through.
