Ingredients

– 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

– 1 lb fresh okra, trimmed and cut into 1-inch pieces

– 1 large onion, diced

– 1 green bell pepper, diced

– 3 cloves garlic, minced

– 2 tbsp Creole seasoning

– 1 cup chicken broth

– 1 (14.5 oz) can diced tomatoes

– 2 tbsp olive oil

– Salt and pepper to taste


Instructions

1. – In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

2. – Add the chicken and cook, stirring occasionally, until browned on all sides, about 5-7 minutes.

3. – Add the onion, bell pepper, and garlic to the skillet. Cook, stirring frequently, until the vegetables are softened, about 3-5 minutes.

4. – Stir in the Creole seasoning, chicken broth, and diced tomatoes. Bring the mixture to a simmer.

5. – Add the okra to the skillet and cook, stirring occasionally, until the okra is tender and the sauce has thickened, about 10-15 minutes.

6. – Season with salt and pepper to taste.

7. – Serve hot, over cooked rice if desired.

Notes
