Ingredients
– 1.5 pounds boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese
– 1/2 cup sun-dried tomatoes, chopped
– 3 cloves garlic, minced
– 2 cups fresh spinach
– 1 teaspoon dried basil
– 1/2 teaspoon dried oregano
– Salt and pepper to taste
Instructions
1. Season the chicken breasts with salt and pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear for 3-4 minutes per side until golden brown.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the heavy cream, parmesan cheese, sun-dried tomatoes, garlic, dried basil, and dried oregano. Whisk to combine and let the sauce simmer for 2-3 minutes.
5. Add the spinach to the sauce and cook for 1-2 minutes until wilted.
6. Return the seared chicken to the skillet and let it simmer in the sauce for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
7. Serve the Creamy Tuscan Chicken (One Pan) immediately, garnished with additional parmesan cheese and fresh basil if desired.
