Ingredients
– 1 package (20 oz) cheese tortellini
– 2 tablespoons olive oil
– 1 shallot, finely chopped
– 3 cloves garlic, minced
– 5 oz fresh baby spinach
– 1 pint cherry tomatoes, halved
– 1 cup heavy cream
– 1/2 cup grated parmesan cheese, plus more for serving
– 1/4 cup fresh basil leaves, chopped
– Salt and freshly ground black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the shallot and garlic and sauté for 2-3 minutes until fragrant.
3. Add the spinach and cherry tomatoes to the skillet. Cook, stirring occasionally, until the spinach is wilted and the tomatoes are slightly softened, about 5 minutes.
4. Pour in the heavy cream and stir to combine. Bring the mixture to a gentle simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
5. Add the cooked tortellini to the skillet and toss to coat evenly with the creamy sauce. Stir in the parmesan cheese and fresh basil.
6. Season with salt and pepper to taste.
