Ingredients
– 1 lb boneless, skinless chicken breasts, cubed
– 1 tbsp olive oil
– 1 cup heavy cream
– 1/2 cup pepperoncini peppers, sliced
– 2 cloves garlic, minced
– 1 tsp dried oregano
– 1/2 tsp red pepper flakes
– 1/4 cup grated Parmesan cheese
– Salt and pepper to taste
Instructions
1. – In a large skillet, heat the olive oil over medium-high heat.
2. – Add the cubed chicken and cook for 5-6 minutes, until lightly browned on all sides.
3. – Reduce heat to medium and add the heavy cream, pepperoncini peppers, garlic, oregano, and red pepper flakes. Stir to combine.
4. – Simmer for 8-10 minutes, stirring occasionally, until the sauce has thickened and the chicken is cooked through.
5. – Remove from heat and stir in the Parmesan cheese. Season with salt and pepper to taste.
6. – Serve immediately over pasta, rice, or with crusty bread.
Notes
For a spicier version, add more red pepper flakes. This dish also pairs well with a crisp green salad.
