Description

This Creamy Garlic Shrimp Over Mashed Potatoes recipe is a delightful and easy-to-make main dish that’s perfect for busy weeknights. Tender shrimp are simmered in a rich and flavorful garlic cream sauce, then served over creamy, buttery mashed potatoes for a comforting and satisfying meal.

Ingredients

– 1 lb peeled and deveined shrimp

– 4 cloves garlic, minced

– 2 tbsp unsalted butter

– 1 cup heavy cream

– 1/2 cup grated Parmesan cheese

– 1 tsp dried parsley

– 1/4 tsp red pepper flakes (optional)

– Salt and pepper to taste

– 4 cups mashed potatoes

Instructions

1. – In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

2. – Add the shrimp to the skillet and cook for 2-3 minutes per side, until the shrimp are pink and opaque.

3. – Pour in the heavy cream and stir to combine. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.

4. – Remove the skillet from heat and stir in the Parmesan cheese, parsley, and red pepper flakes (if using). Season with salt and pepper to taste.

5. – Serve the creamy garlic shrimp immediately over hot, creamy mashed potatoes.

Notes

– For extra richness, you can use half-and-half or a combination of heavy cream and milk.

– Garnish with additional parsley or chives for a pop of color.

– Leftover shrimp and sauce can be stored in the refrigerator for up to 3 days and reheated gently before serving.
