Ingredients
– 1 lb cooked, shredded chicken
– 8 oz cream cheese, softened
– 1/2 cup dried cranberries
– 1/2 cup chopped pecans
– 1 tsp dried thyme
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 sheet puff pastry, thawed
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a medium bowl, combine the shredded chicken, cream cheese, cranberries, pecans, thyme, salt, and pepper. Mix well until fully incorporated.
3. Unfold the puff pastry sheet and roll it out on a lightly floured surface to a 12×9-inch rectangle.
4. Spread the chicken mixture evenly over the puff pastry, leaving a 1-inch border.
5. Tightly roll the puff pastry, starting from the long side, to create a log.
6. Slice the log into 1-inch thick pinwheels and place them on a baking sheet lined with parchment paper.
7. Bake for 18-20 minutes, or until the pinwheels are golden brown.

Notes
For a festive presentation, garnish the pinwheels with fresh thyme or rosemary. These pinwheels can also be made ahead and refrigerated or frozen for later use.
