Ingredients

– 24 mini sweet peppers, halved and seeded

– 8 oz. cream cheese, softened

– 1/4 cup grated Parmesan cheese

– 2 tbsp. chopped fresh cilantro

– 1 tsp. Tajin seasoning, plus more for dusting

– 1/4 tsp. garlic powder

– 1/4 tsp. salt


Instructions

1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.

2. In a medium bowl, combine the cream cheese, Parmesan, cilantro, 1 tsp. Tajin seasoning, garlic powder, and salt. Mix until well blended.

3. Spoon the cream cheese mixture into the hollowed-out mini peppers, dividing it evenly.

4. Arrange the stuffed peppers on the prepared baking sheet.

5. Bake for 15-18 minutes, or until the peppers are tender and the filling is heated through.

6. Remove from the oven and dust the tops of the peppers with additional Tajin seasoning.
