Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup cranberry sauce (homemade or store-bought)


Instructions

1. – Preheat the oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.

2. – In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

3. – In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes.

4. – Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the cranberry sauce.

6. – Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

7. – Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

8. – Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a festive touch, sprinkle the tops of the muffins with a dusting of powdered sugar or chopped pecans before serving.
