Description
Tender and juicy meatballs simmered in a sweet and tangy cranberry sauce – a delicious and easy-to-make appetizer or main dish!
Ingredients
– 1 lb ground beef
– 1 cup breadcrumbs
– 1 egg
– 1/4 cup milk
– 1 tsp salt
– 1/2 tsp black pepper
– 1 (14 oz) can whole cranberry sauce
– 1/4 cup brown sugar
– 2 tbsp apple cider vinegar
Instructions
1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. – In a large bowl, combine the ground beef, breadcrumbs, egg, milk, salt, and pepper. Mix until well combined.
3. – Roll the mixture into 1-inch meatballs and place on the prepared baking sheet.
4. – Bake for 15-20 minutes, until meatballs are cooked through.
5. – In a saucepan, whisk together the cranberry sauce, brown sugar, and apple cider vinegar. Bring to a simmer over medium heat.
6. – Add the cooked meatballs to the cranberry sauce and stir to coat. Simmer for 5 minutes.
7. – Serve the cranberry sauce meatballs warm, either as an appetizer or over mashed potatoes or rice.
Notes
These meatballs can also be made ahead and frozen for up to 3 months. Thaw in the refrigerator before reheating in the cranberry sauce.
