Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 2 tablespoons freshly squeezed lemon juice
– 1 tablespoon lemon zest
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1 1/2 cups fresh or frozen cranberries, halved
Instructions
1. 1. Preheat the oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper, leaving some overhang on the sides.
2. 2. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
3. 3. Add the eggs, lemon juice, and lemon zest, and mix until well combined.
