Ingredients
– 1 cup fresh cranberries, chopped
– 2 jalapeños, seeded and finely chopped
– 1 cup light brown sugar
– 1/4 cup water
– 1 teaspoon kosher salt
Instructions
1. In a medium saucepan, combine the chopped cranberries, jalapeños, brown sugar, and water.
2. Bring the mixture to a boil over medium heat, stirring occasionally, until the sugar has dissolved and the cranberries have softened, about 5-7 minutes.
3. Reduce the heat to low and simmer, stirring frequently, until the mixture has thickened and the cranberries have broken down, about 10-12 minutes.
4. Remove the pan from the heat and stir in the salt.
5. Line a baking sheet with parchment paper. Using a spoon or small scoop, portion the cranberry jalapeño mixture into small mounds, spacing them about 1 inch apart.
6. Allow the candy to cool and firm up, about 30 minutes.
Notes
– For a less spicy version, use only 1 jalapeño or omit the seeds.
