Ingredients

– 1 1/2 cups all-purpose flour

– 1/2 cup unsalted butter, softened

– 1/4 cup granulated sugar

– 1/4 teaspoon salt

– 1 cup fresh cranberries

– 3/4 cup granulated sugar

– 2 large eggs

– 1/4 cup unsalted butter, melted

– 1 tablespoon lemon juice

– 1 teaspoon vanilla extract


Instructions

1. Preheat oven to 350°F. Grease an 8×8-inch baking pan.

2. In a medium bowl, combine the flour, 1/2 cup softened butter, 1/4 cup sugar, and salt. Mix until a dough forms.

3. Press the dough evenly into the prepared baking pan.

4. In a food processor, pulse the cranberries and 3/4 cup sugar until a coarse puree forms.

5. In a separate bowl, whisk together the eggs, 1/4 cup melted butter, lemon juice, and vanilla.

6. Fold the cranberry puree into the egg mixture until well combined.

7. Pour the cranberry curd filling over the shortbread crust.

8. Bake for 30-35 minutes, or until the center is set.

9. Allow the bars to cool completely before cutting and serving.
