Ingredients

– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces

– 1 cup fresh or frozen cranberries

– 8 oz brie cheese, sliced

– 1 pre-made pizza dough

– 2 tbsp olive oil

– 1 tsp dried thyme

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. Preheat your oven to 425°F (220°C).

2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with thyme, salt, and pepper. Cook, stirring occasionally, until the chicken is lightly browned, about 5-7 minutes.

3. Roll out the pizza dough on a lightly floured surface to your desired shape and size.

4. Arrange the cooked chicken and cranberries evenly over the pizza dough. Top with the sliced brie cheese.

5. Bake the pizza for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.

6. Let the pizza cool for a few minutes, then slice and serve immediately.

Notes

For a slightly sweeter pizza, you can drizzle a bit of honey over the cranberries before baking. You can also substitute goat cheese or feta for the brie cheese if desired.
