Description

Cowboy Caviar (also known as Texas Caviar) is a zesty, flavor-packed dip that’s perfect for parties, gatherings, and snacking. This easy-to-make appetizer features a colorful mix of black beans, corn, tomatoes, onions, and a tangy dressing.


Ingredients

– 1 (15 oz) can black beans, drained and rinsed

– 1 (15 oz) can corn, drained

– 1 cup diced tomatoes

– 1/2 cup diced onion

– 1/2 cup diced bell pepper

– 2 tablespoons chopped fresh cilantro

– 2 tablespoons lime juice

– 1 tablespoon olive oil

– 1 teaspoon white wine vinegar

– 1 teaspoon garlic powder

– 1/2 teaspoon ground cumin

– 1/4 teaspoon chili powder

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the drained and rinsed black beans, drained corn, diced tomatoes, onion, bell pepper, and chopped cilantro.

2. In a small bowl, whisk together the lime juice, olive oil, white wine vinegar, garlic powder, cumin, and chili powder.

3. Pour the dressing over the bean and vegetable mixture and stir to coat evenly.

4. Season with salt and pepper to taste.

5. Serve immediately with tortilla chips or refrigerate until ready to serve.

Notes

This dip can be made ahead of time and refrigerated for up to 3 days. The flavors will continue to develop as it sits. Adjust the seasoning just before serving.
