Ingredients
– 1 cup cottage cheese
– 4 large eggs
– 1/4 tsp salt (optional)
Instructions
1. – Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with silicone muffin liners.
2. – In a medium bowl, whisk together the cottage cheese and eggs until well combined. Stir in salt, if using.
3. – Divide the mixture evenly among the prepared muffin cups, filling each about 3/4 full.
4. – Bake for 18-20 minutes, until the egg bites are set and lightly golden on top.
5. – Remove from the oven and let cool in the muffin tin for 5 minutes before transferring to a wire rack.
6. – Serve warm or at room temperature. Enjoy!
