Ingredients
– 4 large eggs, separated
– 1 cup full-fat cottage cheese
– 1/4 cup granulated sugar
– 1/2 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 cup fresh blueberries
Instructions
1. Preheat the oven to 325°F. Line a baking sheet with parchment paper.
2. In a medium bowl, beat the egg whites with an electric mixer until stiff peaks form.
3. In a separate bowl, whisk together the egg yolks, cottage cheese, sugar, vanilla, and salt until well combined.
4. Gently fold the whipped egg whites into the cottage cheese mixture until just combined. Fold in the fresh blueberries.
5. Scoop the batter onto the prepared baking sheet, forming 6-8 equal-sized mounds.
6. Bake for 20-25 minutes, or until the cloud breads are puffed and golden brown.
7. Allow to cool for 5 minutes before serving. Enjoy!
Notes
For a sweeter version, you can dust the cloud breads with powdered sugar before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
