Description

Ingredients

– 4 Cornish hens, rinsed and patted dry

– 2 cups cooked white rice

– 1 cup chopped apples

– 1 cup fresh or frozen cranberries

– 1/2 cup chopped onion

– 2 cloves garlic, minced

– 2 tablespoons butter

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C).

2. In a medium bowl, mix together the cooked rice, chopped apples, cranberries, onion, garlic, butter, thyme, salt, and pepper.

3. Carefully stuff the cavity of each Cornish hen with the apple-cranberry rice mixture.

4. Place the stuffed hens in a large baking dish and roast for 55-65 minutes, or until the hens are golden brown and the internal temperature reaches 165°F (74°C).

5. Remove the hens from the oven and let them rest for 5 minutes before serving.

Notes

For a crispy skin, broil the hens for 2-3 minutes at the end of the cooking time. Serve the hens with any extra stuffing on the side.
