Ingredients

– 2 cups fresh corn kernels

– 2 cups heavy cream

– 1 cup whole milk

– 3/4 cup granulated sugar

– 1/4 teaspoon salt


Instructions

1. – In a medium saucepan, combine the corn kernels, heavy cream, milk, sugar, and salt. Cook over medium heat, stirring frequently, until the sugar has dissolved and the mixture is heated through, about 5-7 minutes.

2. – Remove the saucepan from the heat and let the mixture cool slightly. Transfer to a blender and blend until smooth.

3. – Pour the corn mixture into a large bowl and refrigerate for at least 2 hours, or until completely chilled.

4. – Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, about 20-25 minutes.

5. – Transfer the churned ice cream to a freezer-safe container and freeze for at least 2 hours before serving.

Notes

For a richer, creamier texture, you can use all heavy cream instead of a combination of cream and milk. You can also experiment with different mix-ins, such as chopped toasted pecans or a drizzle of caramel sauce.
