Ingredients
– 1 cup (2 sticks) unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 2 teaspoons instant coffee powder
– 1 teaspoon vanilla extract
– 2 1/4 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
Instructions
1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, cream the softened butter and sugar together until light and fluffy, about 2-3 minutes.
3. Beat in the egg, instant coffee powder, and vanilla extract until well combined.
4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms.
6. Scoop the dough by the tablespoonful and roll into smooth balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
7. Bake for 12-15 minutes, or until the cookies are lightly golden around the edges.
8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For an extra coffee flavor, you can add 1-2 tablespoons of finely ground coffee beans to the dough. Store the cookies in an airtight container at room temperature for up to 1 week.
